In a food processor with metal blade combine all ingredients scraping down sides slowly adding cold water.  Pulse until creamy!

*few cautions – edamame must be organic non-gmo, this recipe does not fit into paleo diet, if you are sensitive to soy I suggest to substitute edamame for another bean or nut, edamame contain antinutrients this recipe should only be used in a rotation of other dips and foods

Pomegranate Vinaigrette:

1/4 cup pomegranate molasses
2 tablespoons red wine vinegar
1 heaping tablespoon Dijon mustard
1 tablespoon honey, or more to taste
Salt
Freshly ground black pepper
3/4 cup extra-virgin olive oil
Pomegranate molasses is made by combining the juice of one lemon, 1/2 cup sugar, and 32 oz. of pomegranate juice and simmering this for about 60 minutes until it reduces to 1/4.  Be sure to mix this mixture frequently. Store in a glass jar in the fridge for up to 3 months.

University Club of Hudson County – Recap. Wed. January 25th Meeting

February 8, 2012

Dr. Leonard Vernon

The University Club of Hudson County’s last meeting was on Wednesday, January 25th! I had the pleasure to be a guest of my friends Tom and Andrea Dugan.  Since Dr. Vernon is a Chiropractor and he was speaking about his newest book I thought it would be great to go! The University Club of Hudson County was organized on December 28th 1897 and was incorporated on October 17th 1900.  To this day it is still a strong vibrant group. This meeting was held at Puccini’s in Jersey City and they put out a fantastic spread of food and was generous with the wine as well. (1064 West Side Ave. Jersey City, NJ)

Dr. Vernon’s presentation revolved around his new book about Mayor Hague of Jersey City. The balanced view of Mayor Hague that Dr. Vernon presented was much needed.

Dr. Leonard Vernon’s four books are –

The Life and Times of Jersey City Mayor Frank Hague: I am the Law.

A Profession Persecuted: The History of Chiropractic New Jersey.

Jersey City Medical Center

Case Studies in Chiropractic MRI – in conjunction with Dr. Christopher Kent

I highly recommend all of Dr. Leonard Vernon’s Books, The University Club of Hudson County, and Puccini’s Restaurant!
